Bajiya - Maldives Local Food These are savory triangles, not to be confused with samosa, which are larger in shape and not Maldivian. The bajiya is a blend of sautéed onions, Maldivian curry blend, curry leaves, dried coarsely ground tuna, wrapped in Maldivian pastry dough and deep-fried. The healthy variety is baled in the oven, but the oven-baked bajiya keeps its flat triangle shape.
