We use only 100% DOP Parmigiano-Reggiano on our pizzas. Each wheel weighs 80 pounds and is made from 150 gallons of grass-fed milk. The cheeses are aged for a minimum of 18 months, sometimes 2 or 3 years before we grate them and sprinkle a little on each pizza. There are many imitators, but none compare to the undisputed king of Italian cheeses. Enjoy.

Did you know that we only use grass-fed, grass-finished organic beef for our homemade Meatballs?

Why is this important? 1. Cows didn't evolve to eat corn, so it makes them sick, and hence they need to be pumped full of antibiotics. 2. Most farmers who grow grass-finished beef practice "mob-stocking" which seeks to replicate the natural process of large herds of grazing animals moving across the grasslands. 3: It's better for you. Cattle that eat grass have a much healthier balance of Omega fats in their tissues than cows fed corn. 4: It tastes better and beefier!
